Ingredients
1 tbsp of oil
2 large onions cut in segments
1/2 of beef
2 tbsp. of massaman curry
2 medium potatoes; peeled and diced
250 ml of water
2 cardamom pods
2 bay leaves
500 ml of coconut milk
2 tbsp. of tamarind concentrate
2 red chili pepper sheets
2 tbsp of brown sugar
Preparation
Heat the oil; fry the beef over medium flame in batches until it is well done. Let it drain on paper towels. Fry the curry paste for 1 minute while stirring it. Add the potato and onion and stir until they are well cooked.
Remove and set it aside. Pour the coconut milk and water and bring to the boil, reduce the flame and let it simmer uncovered for 10 minutes.
Place the beef, potato and onion in the saucepan. Add the cardamom, bay leaf, sugar and tamarind. Stir and let it simmer uncovered for 25 minutes until the beef is tender.
Remove the cardamom pods and bay leaf.
Add the peanuts and spread the chili peppers on top. Serve the dish with cooked rice.
