Thotman plakrai (Thai fried fish)

Ingredients

  • 6 tbsp of oil

  • 1 lb of fish

  • 6 chives, chopped in 1/2 inch pieces

  • 2 crushed garlic cloves

  • 1 tbsp of grated ginger root

  • 3 tbsp. of soy sauce

  • 1 tbsp. of nam pla (or anchovy essence)

  • 1 tbsp of brown sugar

  • 1 tbsp of dry tamarind pulp

  • 4 minced shallots

  • 2 tbsp of fresh coriander leaves




  • Preparation


    Heat 4 tbsp of oil in a pan at medium flame and fry the fish on both sides about 5 minutes on each side or until it is done. Place the fish in a hot dish and keep it warm.


    Fry the chives, garlic and ginger root for 2-3 minutes in the remaining oil.


    Add the soy sauce, nam pla, and sugar and tamarind pulp, always stirring and cook it for another minute. Spray the fish with the sauce.


    Heat the rest of the oil in a small saucepan and saut? the shallots. Spread it on the fish.
