Ingredients
4 cups of coconut milk
1 lb of lean beef in strips
2 tbsp. of red curry paste
1/2 tbsp of cardamom
1/4 tbsp of ground mace (dry nutmeg shell)
1 tbsp. of nam pla (or anchovy essence)
1 oz of minced basil leaves or 1 tbsp of dry basil soaked in lukewarm water for 5 minutes and strained
Preparation
In a saucepan, bring to the boil the coconut milk. Add the beef strips, reduce the flame and let is simmer partially covered for an hour or until the beef is tender.
Add the curry paste, cardamom, mace and nam pla (or anchovy essence) and cook the curry uncovered for 15 minutes. Add the basil before serving.
