Lemon squid salad

Ingredients

  • 1 lb of clean squid

  • 1 red pepper; seedless and sliced

  • 4 lettuce leaves


  • For the dressing:
  • 1/2 cup of lemon juice

  • 1 tbsp of sugar

  • 1 tbsp of fish sauce

  • 2 minced lemon stems

  • 4 minced chives

  • 2 tbsp of fresh minced mint leaves


  • Preparation

    Pour water in a pot and bring to the boil over strong flame. Meanwhile, slice the squid and cook them for 2 minutes.

    Or until they are nearly cooked (do not overcook them), strain them and place them in a bowl.

    To prepare the dressing: place all the ingredients in a jar, cover it and shake to mix it well. Pour the dressing on the squid and take them to the fridge for at least an hour or until you are ready to serve.

    Then, spread the salad on a dish over the lettuce leaves and sprinkle the chili on top. If you need a more substantial dish serve it with white rice.
